It isn’t hard to find French toast in Singapore, with its thick slices of soft and pillowy bread, eggy interior and lightly browned surface. In fact, you can find the delicious dish at most neighbourhood hawker centres and the likes of Ya Kun, Killiney Kopitiam and Fun Toast, or even make it yourself at home.

But for something a bit more special and downright indulgent, consider popping into the following cafes that put an inventive spin on French toast – be it plating it with fried chicken, dusting it with popcorn or spiking it with coffee.

Paaru

Nestled among the art studios of Pearl’s Hill Terrace is Paaru, a serene Japanese-inspired cafe that’s perfect for a leisurely meal. Its delectable French toast ($12++) features thick slices of homemade shokupan, Japanese sugar syrup, cacao nibs, creamy mascarpone and sea salt. This long-standing brunch favourite – which recently celebrated its 10th anniversary – draws long weekend queues, with many customers flocking here to get a taste of their signature French toast. The dish has fluffy slabs of brioche bread stuffed with a generous amount of mascarpone, alongside crispy slices of stout-glazed bacon (Guinness, to be exact) and maple syrup. Pair it with a flat white or hojicha latte for the ultimate meal.

If you’ve just completed a morning stroll around MacRitchie Reservoir and have a hankering for French toast, make a beeline for the nearby Columbus Coffee Co. At the Tanjong Pagar location, you can dine on the creme brulee French toast served with mixed berries, popcorn and vanilla ice cream. The Brittany, available at both locations, sports a chocolate hazelnut filling, salted caramel mascarpone, baby banana slices and crunchy hazelnuts.
