This meaty leg was a visual feast on a bed of greens and the taste didn’t disappoint either. The moist, tender meat had the fullest, most intense pork ﬂavour, laced with a slight smokiness ala bak kwa without the sweetness. Perfecting it was the sweet and chunky pineapple and raisin sauce, which balanced out the salty meat nicely.
2 HONEY GLAZED CHAMPAGNE HAM (6-7KG)

The inside of the ham looked a little pale, but it was the most moist and tender of all. The meat didn’t taste too porky, while the simple pineapple sauce tempered its saltiness. Great news for those who like pork fat – it was in abundance, and was pure melt-in-the-mouth goodness. Also lovely were the rings of caramelised pineapple draped on top.
3 WHOLE HONEY GLAZED BONE-IN HAM (6-7KG)

This slab of meat was moist and well salted beneath its coat of golden-brown, succulent fat. Some of us liked that the meat didn’t have an overpowering pork ﬂavour, while some thought it could be more intense. What we did agree on was the spread of ﬁve accompanying sauces – horseradish, mustard, cranberry, apple and brandy raisin (a huge hit!) – to appeal to all taste buds. It was also the only one that came with two rustic-looking loaves of sourdough.
4 BONE-IN HAM WITH HONEY MUSTARD GLAZE (6KG)

We liked the accompanying piquant spiced honey mustard sauce, but it clashed with the ham, which reeked of cloves. And though tender and juicy, the meat was the saltiest of the lot and left us thirsty. The sides of baby potatoes, carrots and tomatoes on the vine were a nice touch.
5 CHRISTMAS GAMMON HAM WITH CRANBERRY GLAZE (4.5KG)

The ﬁrst thing we noticed when we sliced into the ham was its disappointingly dry and tough texture, even right in the middle. The apple and cranberry sauces were a little bland, but we did like the robust taste of the meat. A surprising treat was the shard of caramelised sugar crowning the ham, which cut through the grease.
TIP: Slice leftover ham off the bone and pack it into an airtight container – it can keep for up to three days in the chiller, or up to a month in the freezer.
