Watermelon Lemonade

By Amanda Jayne Lee, consumer and lifestyle writer.

 

Makes 4 glasses

INGREDIENTS

 

1 small watermelon

1 1/2 cups lemon juice

5 cups water

1 cup sugar

 

DIRECTIONS

1 Pick out as many seeds as you can from the watermelon, then cube it. Freeze the watermelon for 4 hours.

2 In the meantime, make lemonade by mixing the lemon juice, water and sugar together.

3 Blend the frozen watermelon with the lemonade. Divide into four glasses and serve.

 

Orange and Cinnamon Blossom

Makes 150ml

INGREDIENTS

1 Twinings Mandarin Orange Green Tea bag

3 slices ginger

90ml hot water

15ml orange juice

5ml lemon juice

20ml honey

30ml elderflower syrup*

1 cinnamon stick

*Available at the Swedish Food Market in Ikea stores.

 

DIRECTIONS

1 Place the teabag in a glass, then lightly pound the ginger slices and add them in.

2 Pour in the hot water and let the tea steep for 3min.

3 Add in the orange and lemon juices.

4 Stir in the honey and elderflower syrup.

5 Grate some cinnamon into the glass and serve.

 

Virgin Pineapple and Strawberry Mojito

Makes 4 glasses

INGREDIENTS

8 fresh strawberries

1/2 hulled tin pineapple chunks

20 mint leaves

1 large lime, quartered

230ml pineapple juice

4 cans Schweppes soda water

 

For the garnish:

12 frozen strawberries

4 sprigs mint leaves

1/4 tin pineapple chunks

 

DIRECTIONS

1 In a large bowl, muddle the strawberries, pineapples, mint leaves and lime until the juices are released.

2 Strain the mixture and mix the juice with the pineapple juice and soda water.

3 Divide the drink into four glasses.

4 Garnish with frozen strawberries, mint leaves and pineapples. Serve.

 

Summer Breeze

Makes 8 glasses

INGREDIENTS

100ml orange cordial

1.5 litres 7-Up or Sprite

20 raspberries

 

DIRECTIONS

1 In a large punch bowl, add the orange cordial to the soda and mix well. Adjust the amount of cordial to your taste.

2 Top with bright red raspberries for some Chinese New Year cheer. Serve.

 

Fruit Punch

Makes 8 glasses

INGREDIENTS

6 strawberries, sliced

1/4 cup blueberries

1/4 cup raspberries, halved

1/4 cup cherries, seeds removed and halved

4 sprigs mint leaves

1.5 litres boiling water

Peel of 1 orange

Peel of 1 lemon

Juice of 1 orange

Juice of ó lemon

 

DIRECTIONS

1 Add the strawberries, blueberries, raspberries, cherries and mint leaves into a large jug and pour the boiling water in.

2 Twist the orange and lemon peels a little to release the essential oils, then add them to the jug. Leave to infuse for 15min.

3 Add the orange and lemon juices. Divide the punch into 8 glasses and serve.
