TIP You’ll need a long, serrated cake knife to cut the cake into layers, as well as a cake turntable and flat spatula for frosting.

Make sure the cake is cool before frosting. Cut away the top of the cake (to level it) with a cake knife, then slice it into three equal layers.
Place one layer on the cake turntable, and spread a thick layer of frosting on it. Place a second layer and add a thick layer of frosting on top. Then stack the third layer on top.
Top the cake with a generous amount of frosting, then spread evenly until the icing spills over the sides. The top should be smooth and flat. Fill in the gaps along the sides of the cake with more icing.
Hold the spatula against the cake at a 45 deg angle while slowly rotating the turntable. This will pick up all the extra frosting and give you a thin, fl at layer along the sides. Continue until the cake is evenly frosted. Do the same for the top of the cake.
Finally, sprinkle the top with coloured sugar, then decorate with fresh and sugar flowers.
