PEANUT BUTTER CHOCOLATE NO-BAKE COOKIES

Makes 20
INGREDIENTS
2 cups sugar
½ cup milk
½ block (125g) salted butter
¼ cup unsweetened cocoa powder
3 cups Sanitarium Rolled Oats
8 tbsp smooth peanut butter
1 tbsp vanilla extract
DIRECTIONS
1 Line a baking tray with wax paper.
2 Bring the sugar, milk, butter and cocoa powder to the boil in a pot over medium heat, stirring occasionally.
3 After the mixture comes to the boil, cook for another minute, then remove from heat.
4 Stir in the rolled oats, peanut butter and vanilla extract.
5 Drop teaspoons of the mixture onto the baking tray. Set aside at room temperature for 30min until the cookies are cool.
6 Keep chilled in an airtight container for up to 2 days.
