Seriously, what’s more Singaporean than food? Since it’s the nation’s birthday, it’s only fitting that we celebrate it the way Singaporeans best know how to – by noshing our way through the long weekend. Go, make a beeline for these five desserts that boldly flaunt Singapore pride with a contemporary spin.

Fyr Cycene Ond Drinc - baked pistachio melt and pandan ice cream D

19 Boon Tat St, tel: 6221-3703.

The restaurant’s name may be a puzzling mouthful, but this dessert makes no pretenses with its down-to-earth and comforting flavours. The green-on-green combination marries a pistachio lava cake with a velvety scoop of pandan ice-cream, and lashed with pandan crème anglaise sauce.

Density Frozen Custard - Chendol

CHENDOL ICE CREAM, from Density Frozen Custard
4 Short Street, tel: 6268-7918.
From $4 a scoop. Available on 10 August for this weekend. Check their Facebook page for each week’s schedule of flavours.

If you’ve ever grumbled about your chendol melting too quickly and getting all diluted, this might be your answer. This ice cream parlour’s take is a scoop of red bean and coconut milk-flavoured ice cream that is topped with chendol bits and red bean paste, and drizzled with gula melaka.

The Quarters - Duriancanboleh

DURIANCANBOLEH, from The Quarters
16 Enggor St, tel: 6834-4174.

Our prized stinky fruit gets a European makeover here. Think top-of-the-line Mao Shan Wang churned into a rich, luscious crème brûlée with a crackly caramelised crust. Psst. The fibres have been removed, so you wouldn’t need to fret about them getting stuck among your teeth!

Neh Neh Pop - Milo Dinosaur Popsicle

161 Middle Road, tel: 6336-6949.
$7. Available at Artichoke on 8 August, and at Naiise @ The Central (#02-23 Central Clarke Quay) while stocks last.

The badass chefs of Middle Eastern restaurant Artichoke have turned their Midas touch to popsicles with the Neh Neh Pop brand. Created for SG50 is the limited edition Milo Dinosaur: Milo kulfi, marshmallows, Milo-coated cereal, white chocolate dip, and more Milo powder. Enough Milo for you yet?

Bloomsbury Bakers - Pulut Hitam Tart D

PULUT HITAM TART, from Bloomsbury Bakers
#01-889, 30 Bendemeer Road, tel: 6299-3450.

Helmed by two bakers who met at the famous Le Cordon Bleu, it should come as little surprise that this reinterpretation of the traditional black glutinous rice dessert is given the French treatment. This baked tart is layered with chewy pulut hitam and coconut panna cotta, and crowned with crispy coconut nougatine thins.
