Handcrafted cocktails and tapas are taking Singaporeans by storm now, with more bars and eateries serving up their own cocktails and small eats.

Anti:dote, the newly-opened bar at Fairmont Hotel, offers a progressive selection of non-conventional concoctions cleverly disguised as “cure-alls”. Combining classic cocktail making and modern experiential mixology, drinks served at the bar are made from market-fresh ingredients from the bar’s very own herb garden.

Ambience of restaurant: Boasting of a chic and modern aesthetic ambience, Anti:dote’s interior is also influenced by local heritage, featuring an open show kitchen and bar where you can view your cocktails being shaken, and then served to you directly. The class counter in the bar complements its black concrete floors, coupled with a unique motif inspired by a modern interpretation of Peranakan lace embroidery.

For those looking for a refreshing snack that goes well with cocktail, try out the Shigoku oysters ($18). The three freshly shucked oysters is topped with cucumber, wasabi and passionfruit jelly, making the oysters a cooling one. The wasabi replaces the usual tabasco sauce to give the oysters a creamy texture, and passionfruit jelly adds a hint of tanginess to the oysters.

Anti:dote’s 72-hour braised short ribs ($18) is another must-try dish if you love meat and like rich flavours. The short ribs, braised for 72-hours, is paired with crispy beef salad for a light crunch is topped with sweet and sour dressing for more flavour. Although meat dishes are supposed to be hearty and filling, this dish whets your appetite even more with the addition of salad and the dressing, making you ready for more dishes to come.

For those who are first-time foie gras eaters, Anti:dotes’s caramelised foie gras ($18) will give you a pleasant first experience of the fattened goose liver. Sweetened with caramel and served with vinegar glazed leeks on top of crisp puff pastry, the taste of the foie gras is not too overpowering, and will give you a good taste of what foie gras is like, if you have never tried goose liver before and want to know how it’s like without being too overwhelmed.
