Petai are pungent beans common in Southeast Asian dishes. When you put them, plump shrimp and a spicy seafood sauce together, you get a lip-smacking stir-fried dish.

Prawns petai recipe

Serves 4

INGREDIENTS
2 tbsp vegetable oil
2 tbsp Defu Foodstuff  
Chop Garlic
8 tbsp Samsui XO Sauce*
1 cup Pasar petai*
½ cup water
12 PMK frozen prawns, thawed

DIRECTIONS
1 Heat the oil in a wok or pan. Fry the garlic over medium heat until fragrant.

2 Add the XO sauce and fry for 10 seconds.

3 Add the petai and stir-fry for another 10 seconds, then add the water. Bring it to the boil and simmer over low heat for 8min.

4 Add the prawns and stir-fry for 1min over high heat, until they are cooked through.

 

* The Samsui XO Sauce is available at Fairprice Finest, Fairprice Xtra, Isetan Scotts supermarket and Soup Restaurant outlets in Singapore. Petai is available at wet markets and in the chiller section of most supermarkets in Singapore.
