PRESSURE COOKER FRENCH ONION SOUP

Serves 6

INGREDIENTS

100g unsalted butter

5 large yellow onions, sliced about 0.5cm-thick

1/2 tsp baking soda

2 tsp freshly ground black pepper

A pinch of salt

100ml dry red wine

50ml port wine

1.5 litres chicken stock

500ml water

2 sprigs thyme

1 bay leaf

1 tbsp cider vinegar

To serve:

1 baguette, cut to 1cm-thick slices and toasted till crisp

1 tbsp unsalted butter

4 cloves garlic

200g Gruyere cheese, grated
