Fullerton Hotel’s Jade restaurant welcomes the Year of the Dragon with innovative dishes crafted by Chinese Executive Chef Leong Chee Yeng, showcasing bold flavours and premium ingredients elevated with elegant touches.

Among his creations this year is the Gold Rush Dragon Yu Sheng, featuring a hand-drawn dragon motif and a Chinese calligraphy greeting written using cinnamon powder – a distinctive touch by Chef Leong. For an even more opulent celebration, diners can choose the Premium Dragon Dance Yu Sheng, artfully arranged with ingredients to depict a traditional dragon dance, complemented by the symbolic 'Pearl of Wisdom' – signature champagne jelly ‘gold cubes’.

This year, Yàn is ushering in the Year of the Dragon with an array of traditional Cantonese delights, available for both dine-in and takeaway.

Elevate prosperity as you enter the Year of the Dragon with the restaurant’s Kaleidoscope of Prosperity Yu Sheng in “shun de” style with Australian lobster. A mountain of crispy vermicelli adorned with sweet potatoes, pickled ginger, and gold flakes sits atop a vibrant array of vegetables. Succulent lobster, known as "dragon shrimp" in Mandarin, is a delightful addition.

Symbolising abundance, fish takes centre stage as a staple on the festive table. In the Golden Pumpkin Broth with Dried Fish Maw, Conpoy, and Bamboo Pith, tender fish maw is immersed in a golden stew of pumpkin sweetened with scallops. The Steamed Live Marble Goby Fish is another star dish, featuring fresh, tender fish topped with shredded celtuce, salted mustard greens, carrot, and is accented by the savoury zing of preserved vegetables and further elevated by sweet Cordia tree seeds.

Noodle enthusiasts can savour longevity wishes with the Stewed Ee-fu Noodles topped with crispy sakura shrimps and Australian scallops. Abalone takes centre stage in the braised two head abalone with noodles dish, featuring Jinhua ham-infused broth, egg noodles, and vegetables in abalone sauce. This show-stopper adds a fun element with four lucky numbers for an auspicious new year. Available for dine-in only, the 60-inch yusheng serves up to 10 guests with an advance order of 2 days.

Menu-wise, executive Chinese Chef Aaron Tan and his team present a bevy of specialty dishes with eight different set menus, suitable for intimate dining or extravagant gatherings.

For big groups, the Blissfulness Prix-Fixe Menu features Man Fu Yuan’s signatures, including the Abundance Treasure Pot and the all-time favourite Chilled Pumpkin Purée with Sweet Golden Nian Gao.

The lunch menu offers delightful dishes such as Cured Sword Fish with mandarin orange or Bak Kwa Salad as a starter, symbolising abundance and prosperity for the New Year.
