Ree & Mummy has just launched its latest creation for Mother’s Day 2023 – Bird’s Nest Lychee Cheesecake ($68; 6-inch) – and it's the perfect treat if you're looking for something to surprise mum this Mother's Day. Light, creamy, fruity and floral, this soft rose-chiffon cake is topped with lychee water-infused cream cheese, chopped lychees, bird’s nest and rose petals -- it’s perfect for mums who aren’t fans of uber-sugary treats.
When asked about the inspiration behind the cake, Celine Ng, Founder of Ree and Mummy says, “For Mother’s Day, I wanted to create a cake, that is fit for royalty, for all mothers to make them feel special. I chose lychee as one of the core ingredients because I was inspired by Empress Yang Guifei of the Tang Dynasty, who was known for her rare beauty and her love for lychees.” She adds, ”For bird’s nest, besides its beauty-enhancing properties, it is also an ode to a mother’s love and contributions to providing a safe and healthy environment for her children to grow and thrive.”

This Mother’s Day, Chef Maxine Ngooi has crafted a unique Camellia Crown Cake ($62) that’s fit for the queen. Within the floral crown of sponge fingers, you’ll find a generous filling of Camellia tea-infused bavarois and strawberry compote. The cake is also adorned with petals of vanilla creme madame and a core of in-season French Gariguette strawberries for that sweet finish.
