SUNNY SIDE UP

1 Cook egg on low heat so the base doesn’t start to burn even before the top is done.

2 Cover the pan with a lid to reflect the heat, which firms the top of the egg more quickly.

HALF-BOILED EGGS

1 Use eggs stored at room temperature so the shell doesn’t crack in boiling water.

2 Add eggs to a pot of freshly boiled water and cover with a lid. Soak from 3 min (if you want the yolks and whites runny) to 5 min (for well-cooked eggs).
