1/2 cup Quinoa
11/2 cups Water
1 Chicken Breast , skinned and cubed
1/2 cup Frozen Mixed Vegetables , thawed
2 tablespoons Butter
2 cloves Garlic , minced
1 tablespoon Light Soy Sauce
Spring Onion , garnish
1 Put quinoa with water in a pot. Bring to a boil over medium heat. Then cover with a lid and simmer over low heat until all the liquid is absorbed for 10 minute.
2 Turn the heat off but leave the lid on to steam the quinoa for another 5 minutes. Fluff it with a fork. Set aside.
3 Saute garlic with butter in a pan over medium heat until fragrant.
4 Stir-fry chicken and frozen mixed vegetables (thaw it first) until almost cooked.
5 Add in quinoa and fry them together.
6 Season to taste with soy sauce.
7 Add in beaten egg and fry until cooked.
8 Serve and garnish with spring onion.
