Indulge in this sweet and moist dessert, drenched in a rich butterscotch sauce – ice-cream optional. Chef-owner of Pique Nique, Pang Kok Keong, shares his recipe here.

Sticky date pudding recipeMakes 20

374ml water, for boiling
5g baking soda
324g dried dates
192g plain flour
30g baking powder
72g butter
180g brown sugar
1g salt
6g vanilla essence
3 eggs
20 scoops vanilla ice cream

For the butterscotch sauce
18g brown sugar
300g fresh cream (35 per cent fat)
25g golden syrup (or treacle syrup)*
25g butter
1g salt

*Available at major supermarkets in Singapore

1 Preheat oven to 190 deg C and grease a muffin tin.

2 In a saucepan, bring the water to the boil. Remove saucepan from heat and stir in the baking soda. Place the dates into a bowl and pour the boiling water over them. Let it stand for 10min.

3 Pour the mixture into a hand blender and whizz into a paste – you should still see small chunks of dates in it. Set aside to cool until it is lukewarm to the touch. 

4 Sift the flour and baking powder into another bowl, and set aside.

5 Cream the butter, brown sugar and salt. Add the date paste and mix well. Add the vanilla essence, then break in the eggs, one at a time, beating well in between. 

6 Fold in the sifted flour and baking powder until well combined.

7 Spoon the mixture into the muffin tin. Each cup should be ¾-filled. Bake for 15-20min or until a skewer inserted into the centre comes out with crumbs on it. Let the date puddings cool for 10min, then transfer onto a serving plate. Set aside.

8 To make the butterscotch sauce, cook all the ingredients for it over medium-low heat for 3min in a small saucepan. Stir until the sauce is smooth and has thickened slightly. Remove from heat and pour over each date pudding. Serve warm with vanilla ice cream on the side.

TIP: Use a digital scale to measure every ingredient, as the quantities have to be just right for the best results.
