Bagedil (Potato Patties)
1/2 cup cooking oil + more for deep- frying
3 potatoes, scrubbed, peeled and sliced round
1 tsp finely chopped spring onions
1 tsp fried shallots
1/2 tsp ground nutmeg
Salt, to taste
1 large egg, beaten
1 Heat cup oil in a pan. Fry the potatoes over medium heat until soft. Remove from heat and pound until smooth.
2 Add the spring onions, shallots, nutmeg and salt. Mix well then shape into 8 patties.
3 Dip the patties in beaten egg, then deep-fry in hot oil until golden-brown.
