STEAK SANDWICH WITH CARAMELISED ONIONS, ROCKET AND CHEESE

4 pieces ribeye steak (each about 100g)
A pinch of salt and pepper
1 tbsp vegetable oil
5 onions, sliced
8 slices sourdough
1 block (200g) McLelland Seriously Farmy Cheddar, grated
1 Season the pieces of steak with salt and pepper.
Sear them in a greased pan over high heat, for 3min each side, for a medium-rare doneness. Remove from heat and set aside.
2 Heat the oil in a pan. Add the onions and cook over medium heat until brown and soft.
3 Toast the sourdough and top four slices with the arugula, steak, caramelised onions and cheese.
4 Place them in the toaster and toast until the cheese is melted. Top with another slice of sourdough and serve.
