Lava cake D

Makes 10-15 lava cakes


1  Sift 340g plain flour, 300g sugar and 30g matcha powder* into a
large mixing bowl.  Add 200g softened butter, and cream until the mixture is smooth. 

2 Into the same bowl, break 15 eggs, one at a time, mixing well before the next egg. 

3 Melt 700g white chocolate in a stainless steel bowl over a pot of simmering water. 

4 Add the melted white chocolate to the batter and mix well. Portion into a muffin tin.

5 Bake for 9-10min in an oven preheated to 210 deg C.
