The immersive dining experience engages all your senses, intriguing more than just your palate.

Executive Chef Christopher Millar takes up to 8 diners at each seating on a virtual trip to discover some of the world’s most coveted seasonal ingredients that go into the courses. Dishes are inspired by and equally designed to pair with Dom Pérignon vintage Champagnes such as the P1 Vintage 2009, P2 Vintage 2000 and P1 Rosé 2005.

Through a series of video vignettes and projections on both your dining table as well as the room around you, along with the use of aroma, taste, touch and music – all your senses will undertake a multi-sensorial journey as each course progresses.

A veritable feast for the senses with the multimedia projections and video clips keeping you and your guests entertained – you’ll be taken on a journey to Dom Perignon’s vineyards and see the winemaker chatting with Chef Millar alongside other table animations themed after each course.

 

 

Case in point: You’ll have fish swimming across the table as you tuck into the delicious seafood course of saffron and mud crab broth with kombu butter served alongside razor clam topped with garlic crumbs and mandarin aioli.

Another standout course was the umami bomb of Hokkaido uni custard topped with fresh creamy uni and chorizo crumbs. Making it extra impressive, is a generous serve of Sturia caviar sitting atop an Iberico cracker balanced above the cup. Accompanying this dish is a clip of the sustainable Sturia caviar farm in Burgundy where Millar patted a sturgeon.

 

Adding a personalized touch, Chef Millar and his team, Chef de Cuisine Michael de Placido and Head Pastry Chef Jasmine Chew personally explain each dish as the meal progresses.

Cheese lovers will fall for the 20-month aged Comté espuma alongside caramelised yoghurt foam sandwiched between two slices of roasted Comté crackers. It was so moreish, I almost wished there were seconds. Especially as you check out the cheese caves (where cheeses are aged) of fromager Herve Mons of the feted Fromagerie Mons in France with this course.

Dessert was plated live by Chef Chew against the springtime backdrop of a hummingbird lured by a flower. It was great fun both watching her assemble the course, which is shared by all at the table, as it was trying out all the bits and bobs of “bark” and “moss”

Just as you think the evening’s surprises have come to an end, the team goes around the table, blindfolding everyone in synchronised action. The final reveal is a galaxy of shimmering stars projected onto the table scattered with lit candles, and beautifully plated petit fours. All this in reference to how Dom Pierre Pérignon once exclaimed “Come, I am drinking stars!” upon tasting the first champagne ever made.

It was an artful way to round off a magical evening perched on the 62nd floor of One Raffles Place, and you’ll walk out feeling on top of the world.
