This meaty leg was a visual feast on a bed of greens and the taste didn’t disappoint either. The moist, tender meat had the fullest, most intense pork flavour, laced with a slight smokiness ala bak kwa without the sweetness. Perfecting it was the sweet and chunky pineapple sauce, which balanced out the salty meat nicely.

This slab of meat was moist and well salted beneath its coat of golden-brown, succulent fat. Some of us liked that the meat didn’t have an overpowering pork flavour, while some thought it could be more intense. What we did agree on was the mix of sauces – rum and raisin sauce (a huge hit!) – to appeal to all taste buds and giving it a peppery flavour that is balanced with a sweet finish.
