Can’t decide between beef and seafood? Savour the best of both worlds at Bedrock Origin. Located at Oasia Resort Sentosa, the restaurant is serving up prime ingredients from both land and sea by drawing influences from the Bedrock brand as well as the restaurant’s idyllic coastal locale.

The highlight of the Christmas menu is the Surf & Turf Platter, a communal sharing platter with mouthwatering dishes such as the 72-hour slow-cooked black angus short ribs, Australian rock lobster Thermidor, Italian pork sausages, house-made cornbread and more. For seafood lovers, save space for the restaurant’s house specialty of dry-aged grilled whole fish as well as freshly shucked oysters and caviar.

End the sumptuous meal on a sweet note with the restaurant’s new Dynamite Bombe Alaska. Touted as Singapore’s largest Bombe Alaska, it serves up to 16 persons and is made with raspberry white chocolate ice-cream, vanilla sponge, mini chocolate balls and meringue. Rum is poured table-side and lit for a classic flambé.

For a smaller dessert option, the nutty chocolate crumble cake in a box is a nut lover’s dream with a moist and dense cake with chocolate chips, pecans, and walnuts, topped off with crunchy chocolate crumbs. Both desserts will be introduced in time for the season and available from 1 December 2022.

When: The festive menu at Bedrock Origin will be available from 1 December 2022 to 31 January 2023.

Chef Damian D’Silva is celebrating Christmas at Rempapa this year with classic British cuisine that features Singapore heritage flavours. Dig into mains like the roast GG French poulet, which is brined with spices, salt, honey and vinegar for 24 hours, and stuffed with aromatics such as pandan leaves, fresh bay leaves, turmeric leaves and lemongrass.

The spiced meatloaf with sambal mashed potatoes features baked pork and vegetables cooked with nutmeg and curry powder and topped with mashed potatoes that are spiced up with a sambal made of rempah titek and Bombay onions.

There’s also bubble and squeak – chef’s version of the Sunday classic made with brussels sprouts, roasted pork, Bombay onions, and tossed in a tangy vinegar and black bean sauce. For dessert, save space for the spotted dick, a traditional British steamed pudding, served with gula melaka custard.

The four aforementioned dishes are also presented in a Festive Platter, which is only exclusively available for dine-in guests at Rempapa.

When: Christmas highlights at Rempapa are available from 15 to 31 December 2022.

Madame Fan

Over at Madame Fan, Christmas takes a modern Cantonese twist with a selection of a la carte festive dishes created by executive Chinese chef Pak Chee Yit. Stars of the show include the Boston lobster truffle dumpling creamy soup, the tender pan-seared A4 wagyu with foie gras in black miso sauce, as well as the restaurant’s version of the turkey staple: a roasted suckling pig, paired with wok-fried turkey ham and black truffle glutinous rice in a pumpkin cup.

Of course, you can’t leave out dim sum when it comes to Cantonese fare. Madame Fan’s popular signature brunch gets a festive spin with the Holiday Dim Sum Brunch, where you’ll be able to fill your stomach with an ensemble of dim sums along with the seasonal whisky-based Joyeux Noel cocktail. Diners will also be treated to the roasted suckling pig set mentioned above, as a complimentary addition.

Looking for a tipple or two to transform your brunch into a boozy one? Enjoy a free-flow lineup of cocktails, wine and beer by topping up $68 per person for the beverage package.

When: The a la carte festive menu at Madame Fan is available from 1 December 2022 to 2 January 2023, and the Holiday Dim Sum Brunch is available from 24 to 26 December and 31 December 2022 to 2 January 2023.

Indulge in options such as the luxe lobster benedict, which features poached slipper lobster, asparagus, lemon hollandaise, Avruga caviar on truffle brioche, or the sugar and spice Christmas French toast, which features spiced brioche with housemade brandy sauce, vanilla custard, caramelised figs, red currants and shattered toffee.

Enjoy a French-inspired feast at Clos Pasoh, where chef-owner Louis Pacquelin is serving up a 10-course Christmas Eve dinner with a medley of contemporary French creations. The lavish feast commences with potato salad and caviar, hand-cut beef tartare, and scallops and chervil velouté with sea urchin.

The highlight of the evening will definitely be the vol-au-vent géant, a classic puff pastry filled with sweet bread, poultry and foie gras.

There’s also a special brunch menu on Christmas day itself, where you’ll be able to dig into an array of hot and cold starters like potato pancakes with smoked salmon, poultry and wild mushroom paté croute, as well as marinated scallops with citrus sauce.

Mains will be served sharing style, and you can look forward to dishes such as the bar en colère, which features crumbed sea bass served with sauce diable, as well the Pommes mont d’Or truffées, a homely dish of classic potato gratin with aromatic truffles.

Modern Asian restaurant Path, which opened its doors earlier this year, is celebrating the spirit of the joyous season as well as its first Christmas with a special festive menu. French-trained executive chef Marvas Ng, who previously worked at restaurants in Hong Kong and China, has designed a six-course menu that highlights his culinary expertise with both French fare and Asian dishes.

Highlights include the Australian wagyu beef tartare which includes spinach, quail egg and dou ban jiang (broad bean chilli sauce), as well as the BBQ quail drumlet that’s made with Jerusalem artichoke puree and pistachio foam. There’s also the Shanghainese hairy crab roe with brown crab and soy cord, and the braised Australian wagyu short rib that’s served “Canton-style pot-au-feu” (a stew-like dish served as two courses: the broth and then the solid ingredients).
