Recipe: Pan-fried dumplings

Chef Peng Bo of Xiao Lao Ban Yu Tang La Mian in Singapore shares the art of making guo tie, also known as “pot stickers”, or pan-fried dumplings.

Guo tie recipeMakes 20.

160g plain flour

80ml hot water

½ tsp vegetable oil

1 egg, beaten

300g minced pork

150ml chicken stock

2 tbsp light soya sauce

½ tsp chicken stock powder (from a stock cube)

½ tsp finely chopped ginger

½ tsp pepper

½ tsp salt

½ tsp sugar

½ tsp sesame oil

50g chives, finely chopped

1 tbsp water
