Serves 6-8 Prep time 15 mins

Tart Crust
1/2 cup butter
1/3 cup sugar
1/2 teaspoon vanilla
1 cup flour

Cream filling
1 egg
1/2 teaspoon vanilla
8 ounces softened cream cheese
1/4 cup sugar

Topping
2-3 peeled and thinly sliced green apples
1/4 cup sugar
1/2 teaspoon cinnamon
1/3 cup slivered almonds/ chopped walnuts

1 Heat the oven to 200 degrees. Make the crust: cream the butter and sugar. Stir in the vanilla.
2 Mix in the flour to make a smooth dough. You can use your finger to pinch and knead.
3 Press into the bottom of an 8-inch/20cm spring-form pan, giving it a 1-inch/2.5cm rim.
4 Bake for 15 minutes. Remove from oven.
5 Beat all the ingredients for the cream filling together until smooth.
6 Make the topping by tossing the apple slices with the cinnamon and sugar.
7 Spread the cream mixture over the tart crust. Arrange the apple slices on top, then scatter the almonds over.
8 Bake for 40 minutes. Let cool and serve.
