Love at first crackle! The skin was insanely crispy. The herbal rub and stuffing – lavender, thyme, fennel seeds, lemon peel – lent an intoxicating aroma. The meat was superb as well, thanks to a second marinade of pear juice, pear puree and white wine.

Tasty, hearty and vegetarian, we couldn’t get enough of this grain salad for the moreish textures of millet, chickpeas, brown rice, and crusty, herbed breadcrumbs. And those grilled portobellos had all the umami and satisfying texture of meat.

We were impressed by the fruity flavour, thanks to the brine of juniper berries, coriander seeds, honey and red wine. The ham was beautiful on its own, but the pear sauce added a sweet accent.

It was flavoursome without the usual salty aftertaste associated with hams, and incredibly supple. The secret to the this excellent bone-in ham lies in Swiss Butchery’s use of 21-week-old piglets. Because of the high quality of the meat, they skipped the brining for a simple marinade and quick roasting ─ you’re really tasting the natural flavours of the pork!
