Lobster Roll, $48

$48 sounds steep for a sandwich, but this is no ordinary sarnie: buttered then pan-crisped pillows of bread spilling over with 150-160g of fresh, slightly crunchy lobster meat.

Accentuated with just a sprinkling of salt and pepper, the sweetness of the bun echoes that of the creamy, lightly mayonnaise-dressed seafood. The bucket of fries on the side would do better if they were double-fried (the technique of frying French fries twice to crisp them), but dipped into the accompanying garlicky aioli, are quite heavenly.

Maine Lobster ‘Roll’, $26

Anything but pedestrian, this delicate roulade comprises half a Maine lobster enveloping shredded crabmeat – the sweetness of the super-fresh seafood shines with complementary blobs of velvety avocado puree and the lively tartness of remoulade (a French condiment similar to tartar sauce).

This stellar rendition of lobster bisque laced with sour cream doesn’t have the overpowering bitterness that comes from over-roasted seafood – it’s just right with a rich, luxurious texture.

The warm broth is poured over lobster tartare, almost instantly cooking the meat to tender perfection. So good we could get drunk on this.

A luscious four-cheese sauce infused with fennel and dill, liberal chunks of succulent lobster, and oversized al dente macaroni – what’s not to love? It’s recommended as a sharing plate, but sorry, we’re hogging this.
