RECIPE: Pumpkin and sweet potato paste with gula melaka

PUMPKIN AND SWEET POTATO PASTE WITH GULA MELAKA

Serves 8

INGREDIENTS

900g pumpkin
300g sweet potatoes
30g gula melaka
1 cup whole milk
½ cup coconut milk

DIRECTIONS

1 Halve and peel pumpkin. Cut pumpkin into slices. Steam the pumpkin for 15 minutes until soft.

2 Wash sweet potatoes and steam for 30 minutes without removing the skin, until soft.

3. After steaming, remove the skin of the sweet potatoes and mesh them together with the pumpkin slices.

4 Transfer meshed ingredients into a small pot filled with 1 ½ cup of hot water. Add gula melaka.

5 Cook for 5 minutes, while stirring mixture consistently so that no lumps remain.

6 After 5 minutes, add whole milk and coconut milk. Continue stirring for another 2 minutes before letting it simmer until boiled.

7 Serve warm.
